Frittatas, YUM!

Happy Belated Easter to you all! I hope your weekend was filled with laughter, family and happiness!

Po-tatoe, Pa-Tatoe, To-matoe, Fritta-toe! I know not the right saying but could it catch on is the question?! I have been hooked on frittatas recently for breakfast because they are so simple to make on a Sunday and have them ready to go all week long. If I do not have to worry about making the food during the week and the flavor stays the same by Friday then I am all for it! I have a pretty busy schedule but also like to eat healthy (throughout the week, at least)! Now when I say busy schedule it is all stuff I have put on myself, mostly!

Now let's get to the frittata, it is very good and a quick go-to breakfast!

Ingredients:

200g Cooked Butternut Squash

Olive Oil or Melted Coconut Oil

10 Johnsonville Cooked Turkey Sausage Links

5 Whole Eggs

15 TBSP Egg whites

Salt & Pepper to taste

Directions:

1) Preheat oven to 425 degrees.

2) Cut butternut squash into cube size pieces. Place on cooking sheet and spread olive oil or coconut oil on butternut squash (just enough to coat). Sprinkle salt and pepper to your liking on top.

3) Once oven is preheated place the butternut squash in the oven for 30-40 minutes flipping the butternut squash half way through baking.

4) While the butternut squash is cooking cut the fully cooked turkey sausage links into small pieces.

5) In a bowl whisk together the 5 eggs and 15 TBSP egg whites.

6) Spray a round cake pan with non-stick cooking spray and pour the egg mixture into the pan.

7) Sprinkle the turkey sausage throughout the egg mixture (already in the pan).

8) Once the butternut squash is done sprinkle 200g of cooked butternut squash in the egg mixture, as well.

9) Place the pan in the oven at cook for approximately 25-30 minutes until it is fully cooked on top.

10) Let chill before cutting into 5 servings.

11) ENJOY!

Macros per serving: 24g Protein/6g Carbs/9g Fat

It is so easy to make and you can put so many different things in a frittata! Other common ingredients: spinach, peppers, onions, ham, yellow and green squash. Hey, if you are even feeling a little topping add some guacamole, avocado or salsa on top to finish it off!
